Home Beer Brewing Process

What bread and cheese pairs well with Belgian beer?
So I enjoy pairing my beer with bread and cheese. White bread, brown, sourdough, rye, flatbread. Pretty much every type of bread and any type of cheese. I’m in the process of home brewing a Westvleteran 12, (for those of you who do not know the beer it is a Quadrupel Trappist with 10.2% ABV, tastes of brown sugar, chocolate, and dried fruits to name a few. It can only be bought at Abbey St. Sixtus in Belgium, or for a very hefty price online, usually $40 a bottle $189 for six bottles, this does not include shipping).
What do you guys recommend? It’s a beer I’ve only had once, and never paired anything with. If I brew somewhere close to a Westy 12 then I want to have an idea on what to pair it with. Thanks for the help!
to pair with Belgian ale, namely trappist ale, I would pair it with german rye and real English Cheddar. Namely Neil’s Yard. Neil’s Yard Cheddar is exemplary here. Strong flovors all, but all pair well. You would almost think the belgiques and english are related.
And can be done cheaper than Sixtus.
